Every year, thousands of people turn to Butterball's Turkey Talk-Line and Web site for step-by-step guidance on how to cope with holiday turkey traumas.

When research revealed that the majority of Americans were not meeting the recommended dairy intake, we created a cross- platform effort to address this public health concern.

Edelman educated moms and health professionals about the health benefits of three servings of dairy and activated them to include dairy as part of a healthy diet.

Edelman does food like no one else. Our Food & Nutrition practice brings deep expertise to bear- including dietitians, foodservice experts, food bloggers, culinarians and food media specialists. Whether our client brands are brand or commodity marketers, or need to reach influencers developing policy or moms making dinner, we have the insights to create strategies that successfully engage and inspire their audiences.

We're in touch with the trends and touch points that impact our clients' brands and businesses. Here is a "taste" of today's trends from our perspective:

Food is adventure: authenticity, provenance, curiosity. People are looking for fresh vibrant flavors, and also recipes from the old country.

Blue and green: eco and ethical eats (and drinks). U.K. consumers are more interested in seeing recycling information on food labels than fat, sugar and calorie information. And in the U.S., the green conscience is just as strong.

Natural convenience. Today's consumers are increasingly demanding natural foods that are close to the earth and minimally processed. But at the same time, they're not often willing to let go of their long-standing love affair with convenience.

Around the world. Our colleagues tell us to watch for the decline of the UK gastro pub (too many sloppy imitations). In Spain, they're seeing a return to traditional food after an era of "deconstruction". And the Netherlands has gone back to basics: wood-fired cooking, "brown" sandwiches, air-dried Dutch ham and daily food shopping are all on the upswing.

You can be the next food celeb. Everywhere, we see the increase in "people like me" as celebs in the form of food blogging and on TV programs like Top Chef.
